Description

A delightful vanilla cake filled with fresh berries and whipped cream, perfect for any occasion.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries (strawberries, blueberries, or raspberries)
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 24 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat until stiff peaks form.
  8. Gently fold in the fresh berries, being careful not to crush them.
  9. Once the cakes are completely cooled, use a serrated knife to level the tops if necessary.
  10. Place one cake layer on a serving plate. Spread the berry filling evenly over the top. Place the second cake layer on top.
  11. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth. Add the vanilla extract and enough heavy cream to reach your desired consistency.
  12. Spread the frosting over the top and sides of the cake, smoothing it out with a spatula.
  13. Cut the cake into slices and serve. Enjoy your delicious vanilla cake with filling!
