Description

Baked Garlic Butter Shrimp and Rice is a simple and delicious weeknight dinner.


Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 lemon, juiced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the rice, melted butter, minced garlic, chicken broth, paprika, oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Pour the rice mixture into a large baking dish, spreading it out evenly.
  4. Arrange the shrimp on top of the rice mixture in a single layer. Drizzle the lemon juice over the shrimp and season with additional salt and pepper if desired.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  6. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the shrimp are pink and cooked through, and the rice is tender and has absorbed the liquid.
  7. Once done, remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
