Chinese Sponge Cake is a light and fluffy dessert that is perfect for any occasion.

- 4 large eggs
- 120 grams (about 1/2 cup) granulated sugar
- 1 teaspoon vanilla extract
- 80 grams (about 1/3 cup) vegetable oil
- 100 grams (about 3/4 cup) cake flour
- 1 teaspoon baking powder
- Pinch of salt
- 60 ml (about 1/4 cup) milk
Instructions
- Preheat your oven to 160°C (320°F) and grease an 8-inch round cake pan, lining the bottom with parchment paper.
- In a mixing bowl, crack the eggs and add the granulated sugar. Beat on high speed until thick, pale, and tripled in volume, about 5-7 minutes. Mix in the vanilla extract.
- In a separate bowl, sift together the cake flour, baking powder, and salt.
- In a small bowl, combine the vegetable oil and milk. Gradually add this mixture to the egg mixture, gently folding it in.
- Carefully fold the sifted dry ingredients into the egg mixture using a spatula.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve plain or with toppings.
