Description

A light and flavorful dinner option featuring tilapia fillets cooked with lemon and garlic.


Ingredients

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  3. Season the tilapia fillets with salt, pepper, and paprika on both sides.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the seasoned tilapia fillets to the skillet. Cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Pour the lemon juice and zest over the fillets during the last minute of cooking.
  6. Serve the tilapia fillets over a bed of fluffy rice. Drizzle any remaining pan juices over the top.
  7. Sprinkle with fresh chopped parsley for garnish.
