A light and flavorful dinner option featuring tilapia fillets cooked with lemon and garlic.

- 4 tilapia fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 cup long-grain white rice
- 2 cups vegetable broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Season the tilapia fillets with salt, pepper, and paprika on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the seasoned tilapia fillets to the skillet. Cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Pour the lemon juice and zest over the fillets during the last minute of cooking.
- Serve the tilapia fillets over a bed of fluffy rice. Drizzle any remaining pan juices over the top.
- Sprinkle with fresh chopped parsley for garnish.
