Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 tablespoon unsalted butter
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Combine Ingredients: In a small saucepan, mix the fresh lemon juice, granulated sugar, and 1/4 cup of water. Stir well to combine.
  2. Heat Mixture: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally until the sugar is fully dissolved.
  3. Prepare Cornstarch Slurry: In a small bowl, mix the cornstarch with 1 tablespoon of cold water until smooth.
  4. Add Slurry: Once the lemon mixture is simmering, gradually add the cornstarch slurry while continuously stirring. Continue to cook for 2-3 minutes until the sauce thickens.
  5. Add Butter and Zest: Remove the saucepan from heat and stir in the unsalted butter, lemon zest, and a pinch of salt. Mix until the butter is melted and the sauce is smooth.
  6. Use the Sauce: Allow the lemon sauce to cool slightly before serving. It can be drizzled over fish, chicken, or used as a dressing for salads.
