- Preheat air fryer to 400°F (200°C).
- Slice zucchinis into uniform fry-sized strips for even cooking.
- In a large bowl, combine panko, parmesan, garlic powder, onion powder, salt, and pepper.
- Dip zucchini strips into beaten eggs, ensuring full coverage.
- Coat each strip in the breadcrumb mixture, pressing lightly for adhesion.
- Place in a single layer in the air fryer basket. Do not overcrowd.
- Lightly spray with cooking spray for a crisp finish.
- Air fry for 10–12 minutes, shaking halfway through, until golden and crispy.
- Serve hot with your favorite dipping sauce.
Notes
For best results, shake basket halfway through and use fresh zucchini. Store in fridge for up to 3 days or freeze up to 1 month. Reheat in air fryer at 375°F for 5–7 minutes.
