Ingredients
  

  • 2 medium zucchinis sliced into fries
  • 1 cup panko breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs beaten
  • cooking spray

Method
 

  1. Preheat air fryer to 400°F (200°C).
  2. Slice zucchinis into uniform fry-sized strips for even cooking.
  3. In a large bowl, combine panko, parmesan, garlic powder, onion powder, salt, and pepper.
  4. Dip zucchini strips into beaten eggs, ensuring full coverage.
  5. Coat each strip in the breadcrumb mixture, pressing lightly for adhesion.
  6. Place in a single layer in the air fryer basket. Do not overcrowd.
  7. Lightly spray with cooking spray for a crisp finish.
  8. Air fry for 10–12 minutes, shaking halfway through, until golden and crispy.
  9. Serve hot with your favorite dipping sauce.

Notes

For best results, shake basket halfway through and use fresh zucchini. Store in fridge for up to 3 days or freeze up to 1 month. Reheat in air fryer at 375°F for 5–7 minutes.
