Method

  1. Gather all your ingredients: 3 large eggs and 3 tablespoons of softened cream cheese.
  2. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  3. Separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in another bowl.
  4. Using an electric mixer, beat the egg whites on high speed until stiff peaks form, about 3-5 minutes.
  5. In the bowl with the egg yolks, add the softened cream cheese and mix until smooth.
  6. Gently fold the whipped egg whites into the cream cheese and egg yolk mixture, being careful not to deflate the egg whites.
  7. Scoop the mixture onto the prepared baking sheet, forming about 6 mounds, and create a slight indentation in the center of each mound.
  8. Bake in the preheated oven for 25-30 minutes until golden brown.
  9. Let the cloud bread cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Cloud bread is best enjoyed fresh but can be stored in an airtight container for 2-3 days.
