- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until browned and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, sauté minced garlic for about 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese and lemon juice until smooth.
- Add chopped spinach to the sauce and cook for 2-3 minutes until wilted.
- Return the cooked chicken to the skillet and stir to combine. Cook for an additional 2 minutes to heat through.
- Serve over cooked pasta or rice.
