Ingredients

  • 4 boneless skinless chicken breasts
  • 4 garlic cloves, minced fresh cloves strongly recommended
  • 4 tbsp brown sugar light or dark both work
  • 3 tsp olive oil
  • salt and pepper to taste

Equipment

  • oven
  • Casserole dish
  • Small skillet or pan
  • meat thermometer

Method

  1. Preheat oven to 400 degrees F and spray a casserole dish with cooking spray.
  2. Saute minced garlic in olive oil over medium heat until translucent but not browned, about 1 to 2 minutes. Set aside.
  3. Place chicken breasts in the casserole dish and sprinkle salt and pepper on both sides.
  4. Mix brown sugar into the sauteed garlic until combined. Spoon evenly over the tops of the chicken breasts.
  5. Bake uncovered for 15 to 20 minutes or until internal temperature reaches 165 degrees F. If brown sugar starts burning on the dish edges before chicken is done, remove the dish, scrape away burned sugar with a spoon, and return to the oven to finish.

Notes

Do not brown the garlic, cook only until translucent to avoid bitterness. Always verify chicken reaches 165 degrees F internal temperature before serving. Refrigerate leftovers up to 4 days. Freeze up to 3 months in an airtight container or freezer bag.
