  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed preferred
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Method
 

  1. Cut chicken breast into uniform bite-sized pieces, about 1 to 1.5 inches each, for even cooking.
  2. In a medium mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, onion powder, paprika, salt, and pepper until well combined.
  3. Add chicken pieces to the marinade and toss thoroughly to coat every piece evenly. Use your hands for best coverage.
  4. Let chicken marinate for at least 30 minutes at room temperature, or cover and refrigerate for a few hours or overnight for deeper flavor.
  5. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  6. Arrange marinated chicken bites in a single layer in the air fryer basket, leaving space between pieces. Do not overcrowd, cook in batches if needed.
  7. Cook for 10 to 12 minutes, shaking the basket halfway through to ensure even browning on all sides.
  8. Check internal temperature with a meat thermometer, chicken should reach 165°F for safe consumption.
  9. Remove from air fryer and let rest for 1 to 2 minutes before serving.
