- Wash the zucchinis under cool water and slice them into thin rounds, about 1/4 inch thick. Pat them dry with a paper towel.
- In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Stir well to mix.
- Drizzle the olive oil over the zucchini slices and toss to coat evenly. Dip each slice into the Parmesan breadcrumb mixture, pressing lightly to adhere.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes. Place the coated zucchini slices in a single layer in the air fryer basket and lightly spray with cooking spray.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
