- In a medium bowl, combine olive oil, minced garlic, cumin, paprika, oregano, lime juice, salt, and pepper to create the marinade.
- Add the flank or skirt steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 30 minutes, preferably overnight.
- Preheat your grill to high heat. Remove the steak from the marinade and let excess marinade drip off.
- Grill the steak for about 4-6 minutes on each side, depending on thickness and desired doneness. Remove from grill and let rest for 5 minutes.
- While the steak is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side.
- Finely chop the onion and cilantro for toppings.
- Slice the rested steak against the grain into thin strips.
- Assemble the tacos by placing a portion of steak in each tortilla, topping with chopped onion and cilantro, and serving with lime wedges and salsa.
