Ingredients
  

  • 2 pints Grape or cherry tomatoes Fresh tomatoes for roasting.
  • 1 5.3 oz Boursin cheese Garlic and fine herbs flavor recommended.
  • 1 tablespoon Olive oil For drizzling over tomatoes.
  • 1/2 teaspoon Garlic salt Enhances flavor.
  • 1/2 teaspoon Black pepper To taste.
  • 1 pound Short pasta Penne or farfalle recommended.
  • 2 cups Baby spinach Adds nutrition and color.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Fill a large pot with water and bring it to a boil for the pasta.
  • Cook the pasta according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  • In a 9x13-inch baking dish, place the tomatoes and nestle the Boursin cheese in the center. Drizzle with olive oil, sprinkle with garlic salt and black pepper, and stir gently to coat.
  • Bake in the preheated oven for 15-20 minutes until the tomatoes burst and soften. Crush the tomatoes gently with a spoon and stir into the melted Boursin cheese.
  • Add the baby spinach and stir gently. Optionally, return to the oven for an extra minute to wilt the spinach.
  • Combine the cooked pasta with the sauce in the baking dish, tossing until well coated. Serve immediately.
