- Preheat your oven to 400°F (200°C).
- Fill a large pot with water and bring it to a boil for the pasta.
- Cook the pasta according to package directions until al dente, about 8-10 minutes. Drain and set aside.
- In a 9x13-inch baking dish, place the tomatoes and nestle the Boursin cheese in the center. Drizzle with olive oil, sprinkle with garlic salt and black pepper, and stir gently to coat.
- Bake in the preheated oven for 15-20 minutes until the tomatoes burst and soften. Crush the tomatoes gently with a spoon and stir into the melted Boursin cheese.
- Add the baby spinach and stir gently. Optionally, return to the oven for an extra minute to wilt the spinach.
- Combine the cooked pasta with the sauce in the baking dish, tossing until well coated. Serve immediately.
