Ingredients
  

  • 2 pints Grape or cherry tomatoes Fresh tomatoes for roasting.
  • 1 5.3 oz Boursin cheese Garlic and fine herbs flavor recommended.
  • 1 tablespoon Olive oil For drizzling over tomatoes.
  • 1/2 teaspoon Garlic salt Enhances flavor.
  • 1/2 teaspoon Black pepper To taste.
  • 1 pound Short pasta Penne or farfalle recommended.
  • 2 cups Baby spinach Adds nutrition and color.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Fill a large pot with water and bring it to a boil for the pasta.
  3. Cook the pasta according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  4. In a 9x13-inch baking dish, place the tomatoes and nestle the Boursin cheese in the center. Drizzle with olive oil, sprinkle with garlic salt and black pepper, and stir gently to coat.
  5. Bake in the preheated oven for 15-20 minutes until the tomatoes burst and soften. Crush the tomatoes gently with a spoon and stir into the melted Boursin cheese.
  6. Add the baby spinach and stir gently. Optionally, return to the oven for an extra minute to wilt the spinach.
  7. Combine the cooked pasta with the sauce in the baking dish, tossing until well coated. Serve immediately.
