Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley chopped, optional for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with olive oil and set aside.
  2. In a medium bowl, combine the softened cream cheese, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined.
  3. Arrange the chicken breasts in a single layer in the prepared baking dish.
  4. Spread the cream cheese mixture evenly over the top of each chicken breast, about 1/4 inch thick.
  5. Pour the chicken broth around the chicken breasts, avoiding pouring directly on top of the cream cheese mixture.
  6. Cover the baking dish tightly with aluminum foil to prevent the cream cheese topping from browning too quickly.
  7. Bake in the preheated oven for 25 minutes covered.
  8. Remove the foil and continue to bake for an additional 10 to 15 minutes, or until the chicken reaches 165°F internally and the cream cheese topping is bubbly and golden.
  9. Remove the dish from the oven and allow it to rest for 5 minutes before serving.
  10. Garnish with freshly chopped parsley if desired, then serve immediately.

Notes

For added flavor, consider marinating the chicken breasts in lemon juice and herbs before preparing. To make the chicken more tender, pound the breasts to an even thickness. This recipe is perfect for meal prep. Leftovers can be stored in the refrigerator for up to 3 days. For a spicier kick, add a dash of red pepper flakes to the cream cheese mixture.
