Balsamic Blueberry Goat Cheese Crostini

Ingredients
  

  • 1 Baguette sliced into 1/2 inch rounds
  • 4 oz Goat cheese at room temperature
  • 1 cup Fresh blueberries
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • 1 tsp Fresh thyme leaves only
  • 1 tbsp Olive oil

Method
 

  1. Preheat oven to 375°F with the rack in the center position.
  2. Slice the baguette into half-inch rounds and arrange on a baking sheet. Brush both sides of each slice lightly with olive oil.
  3. Bake for 8 to 10 minutes until the edges are golden brown and the bread is crisp.
  4. While the bread toasts, heat a small pan over medium heat. Add the balsamic vinegar and honey, swirl together, then add the blueberries. Cook for 3 to 4 minutes until the berries soften slightly but still hold their shape.
  5. Remove the toasted baguette slices from the oven and let cool for one minute. Spread a generous layer of goat cheese on each crostini.
  6. Spoon the warm balsamic blueberries over the goat cheese, dividing evenly among the crostini.
  7. Sprinkle fresh thyme leaves over the top and serve immediately.

Notes

Use fresh blueberries for best results. Don't overcook blueberries or they'll become mushy. Toast baguette slices until golden and crispy. Can use honey goat cheese for extra sweetness. Fresh thyme is preferred over dried.
