- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, mash the bananas until smooth.
- Add oats, peanut butter, honey, vanilla extract, cinnamon, and salt. Mix until well combined.
- If using, gently fold in chocolate chips or nuts.
- Use a tablespoon to scoop small portions of dough and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
