Ingredients
  

  • 4 salmon fillets thawed, approx. 16 oz total
  • 4 tsp Cajun seasoning or Japanese BBQ or blackened seasoning
  • 1 tsp olive oil or avocado oil
  • 1.33 cups white rice cooked
  • 1.5 cups shredded carrots
  • 1.5 cups edamame shelled
  • 1.5 cups cucumbers diced
  • 0.5 cup plain non-fat Greek yogurt
  • 2 tbsp honey
  • 1 tbsp sriracha
  • 1 tsp rice vinegar or white vinegar

Method
 

  1. Line your air fryer with foil if needed. Dice salmon into 1.5-inch cubes.
  2. Toss salmon cubes with olive oil and Cajun seasoning in a large bowl.
  3. Air fry salmon at 400°F for 7 minutes, working in batches as needed. Cook until internal temperature reaches 145°F.
  4. Mix Greek yogurt, honey, sriracha, and rice vinegar in a small bowl to make the bang bang sauce.
  5. Assemble bowls with rice, carrots, edamame, cucumbers, and salmon. Drizzle with bang bang sauce and serve.

Notes

Cut salmon evenly for even cooking. Store rice, salmon, and sauce separately. Reheat salmon gently in a skillet to avoid drying out. Use leftovers in wraps or tacos.
