- Mix the spices (smoked paprika, garlic powder, onion powder, brown sugar, cumin, salt, and black pepper) in a small bowl.
- Rub the spice mixture all over the pork shoulder.
- Heat olive oil in a large skillet over medium-high heat and sear the pork shoulder on all sides until browned.
- Transfer the seared pork to a slow cooker and pour barbecue sauce over it. Cover and cook on low for about 8 hours.
- Once cooked, shred the pork using two forks and mix it with the barbecue sauce in the slow cooker.
- In a mixing bowl, combine green cabbage, red cabbage, grated carrot, mayonnaise, apple cider vinegar, honey, and season with salt and pepper to taste to make the slaw.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Assemble the tacos by placing a generous amount of pulled pork in the center of each tortilla, topping with slaw, and garnishing with fresh cilantro.
- Serve with lime wedges on the side.
