Pulled Pork Ingredients
  • 2 lbs Pork shoulder Ideal cut for slow cooking.
  • 1 tablespoon Olive oil For searing the pork.
  • 1 tablespoon Smoked paprika Adds a smoky flavor.
  • 1 tablespoon Garlic powder Enhances flavor.
  • 1 tablespoon Onion powder Adds depth to the flavor.
  • 1 tablespoon Brown sugar Balances the spices.
  • 1 teaspoon Cumin Adds warmth.
  • 1 teaspoon Salt Enhances overall flavor.
  • 1 teaspoon Black pepper Adds spice.
  • 1 cup Barbecue sauce Your choice of flavor.
Slaw Ingredients
  • 2 cups Green cabbage Finely shredded.
  • 1 cup Red cabbage Finely shredded.
  • 1 large Carrot Grated.
  • 1/2 cup Mayonnaise For the slaw dressing.
  • 2 tablespoons Apple cider vinegar Adds tanginess.
  • 1 tablespoon Honey For sweetness.
  • to taste Salt and pepper For seasoning the slaw.
For Serving
  • 8 small Corn or flour tortillas For serving the tacos.
  • to taste Fresh cilantro Chopped, for garnish.
  • as needed Lime wedges For serving.

Method
 

  1. Mix the spices (smoked paprika, garlic powder, onion powder, brown sugar, cumin, salt, and black pepper) in a small bowl.
  2. Rub the spice mixture all over the pork shoulder.
  3. Heat olive oil in a large skillet over medium-high heat and sear the pork shoulder on all sides until browned.
  4. Transfer the seared pork to a slow cooker and pour barbecue sauce over it. Cover and cook on low for about 8 hours.
  5. Once cooked, shred the pork using two forks and mix it with the barbecue sauce in the slow cooker.
  6. In a mixing bowl, combine green cabbage, red cabbage, grated carrot, mayonnaise, apple cider vinegar, honey, and season with salt and pepper to taste to make the slaw.
  7. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  8. Assemble the tacos by placing a generous amount of pulled pork in the center of each tortilla, topping with slaw, and garnishing with fresh cilantro.
  9. Serve with lime wedges on the side.
