Method
- Heat a skillet over medium heat and add the ground beef. Break the meat into smaller pieces as it cooks.
- Cook the beef for about 5-7 minutes until browned. Drain excess fat, then sprinkle taco seasoning over the beef and add a splash of water. Stir and cook for another 2-3 minutes.
- In a large bowl, combine the seasoned beef with refried beans and half of the shredded cheddar cheese. Mix until well combined.
- Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- Place a generous amount of the beef mixture in the center of each tortilla. Add a dollop of sour cream, diced tomatoes, green onions, and shredded lettuce.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.
- Heat the skillet again and add olive oil. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown.
- Sprinkle the remaining cheddar cheese on top of the burritos while they cook to create a cheesy crust.
- Slice each burrito in half and serve warm with extra sour cream or salsa on the side.
