Ingredients

  • 4 large Flour tortillas Soft tortillas to wrap all the delicious fillings.
  • 1/2 cup Diced tomatoes Adds a juicy crunch and vibrant color.
  • 1/4 cup Chopped green onions Brings a mild onion flavor and a pop of green.
  • 1/2 cup Shredded lettuce Adds freshness and texture.
  • 1 tablespoon Olive oil Used for cooking the burritos to a golden brown.

Method
 

  1. Heat a skillet over medium heat and add the ground beef. Break the meat into smaller pieces as it cooks.
  2. Cook the beef for about 5-7 minutes until browned. Drain excess fat, then sprinkle taco seasoning over the beef and add a splash of water. Stir and cook for another 2-3 minutes.
  3. In a large bowl, combine the seasoned beef with refried beans and half of the shredded cheddar cheese. Mix until well combined.
  4. Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  5. Place a generous amount of the beef mixture in the center of each tortilla. Add a dollop of sour cream, diced tomatoes, green onions, and shredded lettuce.
  6. Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.
  7. Heat the skillet again and add olive oil. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown.
  8. Sprinkle the remaining cheddar cheese on top of the burritos while they cook to create a cheesy crust.
  9. Slice each burrito in half and serve warm with extra sour cream or salsa on the side.
