- Preheat your oven to 400°F (200°C) if baking.
- Rinse the cod fillets under cold water and pat dry with paper towels.
- Place the cod fillets in a lightly greased baking dish and drizzle with olive oil.
- In a small bowl, combine minced garlic, lemon zest, oregano, paprika, salt, and pepper to create a marinade.
- Spread the marinade over the cod fillets and squeeze fresh lemon juice on top. Allow to marinate for at least 15 minutes.
- For baking, place the dish in the preheated oven and bake for 12-15 minutes until the cod flakes easily with a fork.
- For grilling, preheat the grill to medium-high heat, oil the grates, and grill the fillets for about 4-5 minutes on each side.
- For pan-searing, heat olive oil in a skillet over medium heat and cook the fillets for about 3-4 minutes on each side until golden brown.
- Check that the internal temperature reaches 145°F (63°C) for safe consumption.
- Let the cod rest for a few minutes before serving. Garnish with fresh parsley.
