- Preheat your oven to 160ºC (320ºF) for a fan oven or 170ºC (338ºF) for a conventional oven. Line a baking tray with parchment paper.
- In a heatproof bowl, combine the chopped dark chocolate and butter. Place over a pan of simmering water and stir until melted. Remove from heat and stir in the vanilla extract.
- In a separate bowl, whisk together the caster sugar, demerara sugar, and eggs until light, thick, and fluffy.
- Sift together the flour, cocoa powder, baking powder, chocolate chips, and salt in another bowl. Gradually fold the melted chocolate mixture into the whipped egg mixture, then fold in the dry ingredients until just combined.
- Scoop tablespoons of the batter onto the prepared baking tray, spacing them well apart. Bake for 12-14 minutes until the tops are set and crackly.
- Remove from the oven and let cool on the baking tray for about 10 minutes before transferring to a cooling rack.
