Ingredients
  

  • 8 cups prepared birria broth
  • 12 ounces ramen noodles 4 three-ounce packages, discard seasoning packets
  • 2 cups shredded birria beef
  • 1/2 cup red onions diced, optional topping
  • 2 jalapeƱos sliced, optional topping
  • 1/4 cup fresh cilantro chopped, optional topping
  • 1 lime sliced into wedges, optional topping
  • 4 soft boiled eggs cook for 6 minutes for runny yolks or 8 minutes for medium-boiled, optional topping

Method
 

  1. Prepare the birria ahead of time (up to 5 days in advance), keeping the shredded beef and broth separate for easy assembly.
  2. Add the birria broth to a large pot on the stove over high heat and bring to a rolling boil.
  3. Once the broth begins to boil, add the ramen noodles and cook for 3 minutes, stirring occasionally to prevent clumping.
  4. Add the shredded birria beef to the pot with the broth and noodles, stirring gently to combine without breaking up the noodles.
  5. Keep on the stove for 1 to 2 minutes more to heat the beef through completely.
  6. Ladle the ramen into individual serving bowls, ensuring each portion has noodles, broth, and beef.
  7. Top with desired optional toppings: diced red onions, sliced jalapeƱos, fresh cilantro, lime wedges, and soft boiled eggs.

Notes

This recipe requires prepared birria, which can be made up to 5 days in advance. Total prep time does not include making birria from scratch (3-4 hours). If you don't have 8 cups of birria broth, substitute additional beef broth. For gluten-free version, use gluten-free ramen noodles. Spice level depends on your birria recipe. Adjust arbol chiles to taste. Store leftover birria beef and broth separately from noodles for best results.
