Method
 

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through.
  3. Remove the pork chops from the skillet and set aside on a plate.
  4. In the same skillet, add blackberries, chicken broth, honey, balsamic vinegar, and thyme. Stir gently and cook for 5-7 minutes until the sauce thickens.
  5. Stir in the butter until melted and combined. Taste the sauce and adjust seasoning with salt and pepper if needed.
  6. Return the pork chops to the skillet and spoon the sauce over them. Let simmer for 1-2 minutes to meld flavors.
  7. Serve the pork chops with the blackberry sauce drizzled on top.
