Ingredients

  • 1 tablespoon Olive oil For searing the pork chops.
  • 1 cup Fresh blackberries The star of the dish!
  • 1/4 cup Chicken broth Adds moisture and depth to the sauce.
  • 2 tablespoons Honey Balances the tartness of the blackberries.
  • 1 tablespoon Balsamic vinegar Adds a tangy flavor to the sauce.

  • 1 tablespoon Unsalted butter Enriches the sauce.

Instructions
 

  • Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  • In a skillet, heat olive oil over medium-high heat. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through.
  • Remove the pork chops from the skillet and set aside on a plate.
  • In the same skillet, add blackberries, chicken broth, honey, balsamic vinegar, and thyme. Stir gently and cook for 5-7 minutes until the sauce thickens.
  • Stir in the butter until melted and combined. Taste the sauce and adjust seasoning with salt and pepper if needed.
  • Return the pork chops to the skillet and spoon the sauce over them. Let simmer for 1-2 minutes to meld flavors.
  • Serve the pork chops with the blackberry sauce drizzled on top.

This dish pairs well with garlic mashed potatoes or roasted vegetables.
