- Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through.
- Remove the pork chops from the skillet and set aside on a plate.
- In the same skillet, add blackberries, chicken broth, honey, balsamic vinegar, and thyme. Stir gently and cook for 5-7 minutes until the sauce thickens.
- Stir in the butter until melted and combined. Taste the sauce and adjust seasoning with salt and pepper if needed.
- Return the pork chops to the skillet and spoon the sauce over them. Let simmer for 1-2 minutes to meld flavors.
- Serve the pork chops with the blackberry sauce drizzled on top.
