  • 2 cups blueberries fresh
  • 2 cups broccoli florets fresh

  • 0.25 cup balsamic vinaigrette dressing

Method
 

  1. Wash blueberries, broccoli, and spinach thoroughly.
  2. In a large mixing bowl, combine blueberries, broccoli florets, spinach, and red onion.
  3. Toss gently to mix ingredients evenly.
  4. Sprinkle crumbled feta cheese and toasted walnuts over the salad.
  5. Drizzle balsamic vinaigrette over the salad and toss lightly to coat.
  6. Serve immediately, chilled if desired.

Notes

Roast broccoli for extra flavor. Add protein with grilled chicken or chickpeas. Use vegan cheese for dairy-free option. Assemble ahead but add dressing just before serving.
