Ingredients
  

  • 1 large egg
  • 1.5 ripe bananas about 6 oz / 170g total
  • 1 cup full-fat cottage cheese
  • 1 cup rolled oats gluten-free if necessary
  • 0.75 cup blueberries fresh or frozen
  • 2–4 tbsp maple syrup or honey optional for extra sweetness
  • 1 tsp lemon juice optional
  • 1 tsp vanilla extract optional

Method
 

  1. Preheat oven to 350°F (180°C). Line a 7×7-inch baking pan with parchment paper or lightly grease it.
  2. In a blender or food processor, add egg, bananas, cottage cheese, oats, lemon juice, vanilla, and maple syrup if using.
  3. Blend until smooth. Oats should blend into a flour-like batter.
  4. Rinse blueberries. Optionally toss with ½ tbsp flour to prevent sinking.
  5. Gently stir blueberries into the batter (do not blend).
  6. Pour batter into the prepared pan, spread evenly, and top with extra blueberries if desired.
  7. Bake 30–35 minutes until center is set and edges are golden. Toothpick should come out clean.
  8. Cool in the pan for at least 30 minutes before slicing.

Notes

Use ripe bananas for natural sweetness. Toss blueberries in flour to prevent sinking. Add cinnamon or chopped nuts for variation. Substitute with other fruits like apples or raspberries. Make dairy-free with an alternative cottage cheese.
