  • 1 cup full-fat cottage cheese
  • 1 cup fresh blueberries
  • 3 large eggs
  • 0.5 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together cottage cheese, eggs, maple syrup, vanilla extract, and cinnamon until smooth and well combined.
  3. Gently fold in the fresh blueberries without crushing them.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes, or until set in the center and golden on top.
  6. Allow to cool slightly before slicing into squares. Serve warm.

Notes

Use fresh blueberries to avoid excess moisture. Try raspberries, peaches, or bananas as fruit variations. Sprinkle with nuts before baking for crunch.
