- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, whisk together eggs, honey or maple syrup, cinnamon, and vanilla extract.
- Stir in the cottage cheese and rolled oats until well combined.
- Gently fold in the fresh blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes, or until the top is golden and the center is set.
- Let cool slightly before slicing. Serve warm or cold.
Notes
Swap in different berries or add nuts for variation. Add lemon zest or protein powder if desired. Delicious warm or cold.
