Method
 

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Mix well.
  3. In another bowl, whisk together the almond milk, honey (or maple syrup), applesauce, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  5. Fold in the blueberries gently to avoid breaking them.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
