Ingredients
  

  • 1.5 cups orzo pasta uncooked
  • 2 whole boneless skinless chicken breasts cut into strips
  • 1 medium zucchini sliced
  • 1 whole red bell pepper diced
  • 1 whole yellow bell pepper diced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 3 cups chicken broth low-sodium preferred
  • 1 package Boursin garlic and herb cheese 5.2 oz
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • 0.25 cup fresh parsley chopped, for garnish

  • Large oven-safe baking dish (9x13 inch)
  • large skillet
  • Aluminum foil
  • Cutting board and knife

Method
 

  1. Preheat the oven to 375°F and lightly grease a large 9x13 inch baking dish.
  2. Season the chicken strips with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat and brown the chicken until golden, about 3 to 4 minutes per side. Remove and set aside.
  4. In the same skillet, saute the minced garlic and sliced vegetables for 2 to 3 minutes until slightly softened.
  5. Add the orzo, sauteed vegetables, browned chicken, chicken broth, and Boursin cheese to the prepared baking dish. Stir gently to combine.
  6. Make sure the orzo is fully submerged in the liquid. Add a bit more broth if needed.
  7. Cover the dish tightly with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 to 15 minutes until creamy and lightly golden on top.
  9. Stir gently halfway through the uncovered baking time to prevent sticking.
  10. Let rest for 5 minutes, then garnish with fresh chopped parsley and serve warm.

Notes

Make sure the orzo is fully submerged in liquid before baking so it cooks evenly. Add extra broth if needed to keep the orzo creamy. Let the dish rest before serving for best texture. Don't overcook the chicken during browning as it continues cooking in the oven. Be careful not to oversalt as Boursin cheese already contains seasoning.
