Ingredients
  

  • 1 cup Wheat bran Provides fiber and a nutty flavor.
  • 1 cup Buttermilk Adds moisture and a slight tang.
  • 1/2 cup Brown sugar Adds sweetness and moisture.
  • 1/4 cup Vegetable oil Adds fat for a soft texture.
  • 1 large Egg Binds the ingredients together.

  • 1 cup All-purpose flour Provides structure.
  • 1 teaspoon Baking soda Leavening agent for rising.
  • 1/2 teaspoon Baking powder Works with baking soda for fluffiness.
  • 1/2 teaspoon Salt Balances sweetness.
  • 1/2 cup Raisins or chopped nuts (optional) Adds flavor and texture.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
  • In another bowl, whisk together the brown sugar, vegetable oil, egg, and vanilla extract until smooth. Add the wheat bran and buttermilk, stirring until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in raisins or nuts if using.
  • Prepare a muffin tin by lining it with paper liners or greasing it. Fill each muffin cup about two-thirds full with batter.
  • Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
