- Preheat oven to 400 degrees F (200 degrees C) and prepare a baking dish with nonstick spray.
- Toss cauliflower florets in olive oil, salt, and pepper; roast for about 15 minutes until tender.
- In a skillet, season and cook chicken breasts over medium heat for 6 to 8 minutes per side until fully cooked. Shred using two forks.
- In a bowl, mix shredded chicken with buffalo sauce and cream cheese; stir in half of the cheddar cheese.
- Combine roasted cauliflower with the chicken mixture; transfer to the baking dish.
- Top with remaining cheddar cheese and green onions; bake for an additional 15 to 20 minutes until golden brown.
