  • 2 teaspoons Light olive oil Helps crisp up the edges of the flatbread.
  • 1/2 cup Buffalo wing sauce Adjust to your spice preference for the perfect kick.
  • 1 1/2 cups Diced cooked chicken Approximately 3/4 pounds, use leftover or rotisserie chicken.
  • 1 cup Shredded mozzarella cheese Adds a melty, gooey texture.
  • 1/3 cup Blue cheese dressing A creamy addition that balances the heat.
  • 1/3 cup Sliced green onions About 3 green onions, adds a fresh crunch.

Method
 

  1. Prepare the chicken by dicing cooked chicken or cooking raw chicken until it reaches an internal temperature of 165°F (75°C).
  2. If making homemade buffalo sauce, combine 1/2 cup of hot sauce with 2 tablespoons of melted butter in a bowl and stir until smooth.
  3. Preheat the oven to 425°F (220°C).
  4. Place the warmed flatbreads on a baking sheet. Spread buffalo sauce over each flatbread, then evenly distribute the diced chicken on top.
  5. Sprinkle shredded mozzarella cheese over the chicken and drizzle blue cheese dressing on top.
  6. Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown and the cheese is bubbly. Optionally, broil for an additional 1-2 minutes for a crispy top.
  7. Remove from the oven and let cool for a minute before garnishing with sliced green onions.
  8. Slice and serve the Buffalo Chicken Flatbread warm.
