Ingredients
  

  • 1 lb lean ground beef 90/10 or 93/7 lean recommended
  • 2 cups brown rice cooked according to package instructions
  • 1 cup cherry tomatoes halved
  • 2 cups lettuce shredded
  • 0.5 cup pickles sliced
  • 1 cup cheddar cheese shredded
  • 0.25 cup ketchup
  • 2 tbsp mustard
  • salt and pepper to taste

Method
 

  1. Cook brown rice according to package instructions (approximately 40-45 minutes). Set aside once cooked.
  2. In a skillet over medium heat, cook the lean ground beef. Season generously with salt and pepper.
  3. Break up the meat with a wooden spoon as it cooks, stirring occasionally until browned all over with no pink remaining, about 8 minutes.
  4. Drain excess fat from the cooked beef and set aside.
  5. While beef is cooking, prepare vegetables: halve cherry tomatoes, shred lettuce into bite-sized pieces, and slice pickles if needed.
  6. In a small bowl, mix ketchup and mustard together until well combined. Set aside for drizzling.
  7. To assemble bowls: Start with a layer of cooked brown rice at the bottom of each serving bowl.
  8. Add seasoned ground beef on top of rice while still warm, followed by layers of shredded lettuce, halved cherry tomatoes, and sliced pickles.
  9. Top with shredded cheddar cheese while the beef is still warm so it melts slightly.
  10. Drizzle the ketchup-mustard sauce over all the assembled ingredients and serve immediately.

Notes

For meal prep, store components separately in airtight containers for up to 4 days. Keep sauce and fresh vegetables separate until serving. For a low-carb version, omit rice and add extra lettuce or use cauliflower rice. Can substitute ground turkey or chicken for beef. Add bacon bits, jalapenos, or different cheese varieties for customization.
