Ingredients
  

  • 1 lb sirloin steak cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves fresh garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 lb baby potatoes halved
  • 2 tablespoons olive oil
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Wash and halve baby potatoes.
  2. Toss potatoes with olive oil, salt, pepper, and half the herbs. Spread evenly on a parchment-lined baking sheet.
  3. Roast 25–30 minutes, flipping halfway, until golden brown and fork-tender.
  4. While potatoes roast, heat skillet over medium-high. Melt butter and sauté garlic with remaining herbs until fragrant, about 30 seconds.
  5. Season steak bites with salt and pepper. Add to skillet and sear 3–4 minutes per side until desired doneness (medium-rare ~130–135°F).
  6. Serve steak bites immediately with crispy roasted potatoes. Drizzle pan butter over steak.

Notes

Use sirloin or ribeye with good marbling for best results. Don’t overcrowd skillet—batch searing ensures browning. Medium-rare gives the juiciest steak bites. Fresh herbs and fresh garlic are essential for flavor.
