Ingredients
  

  • 1 pound Large shrimp Peeled and deveined.
  • 8 ounces Smoked sausage Sliced into bite-sized pieces.
  • 2 tablespoons Olive oil For sautéing.
  • 1 small Onion Diced finely.
  • 1 medium Bell pepper Diced; any color.
  • 3 cloves Garlic Minced.
  • 1 teaspoon Cajun seasoning For flavor.
  • 1/2 teaspoon Paprika Adds smokiness.
  • to taste Salt and pepper For seasoning.
  • 1 cup Cherry tomatoes Halved.
  • 2 cups Cooked rice Serves as the base.
  • to taste Fresh parsley Chopped, for garnish.

Method
 

  1. Prepare all ingredients: peel and devein shrimp, slice sausage, dice onion and bell pepper, mince garlic, and halve cherry tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook for 5-7 minutes until browned.
  3. Remove sausage from skillet and set aside. In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until soft.
  4. Add minced garlic and cook for an additional minute, stirring occasionally.
  5. Add shrimp, Cajun seasoning, paprika, salt, and pepper to the skillet. Cook for 3-4 minutes until shrimp turn pink and opaque.
  6. Return sausage to the skillet along with halved cherry tomatoes. Cook for another 2-3 minutes.
  7. Fold in cooked rice until well combined and heated through. Serve hot, garnished with fresh parsley.
