- Prepare all ingredients: peel and devein shrimp, slice sausage, dice onion and bell pepper, mince garlic, and halve cherry tomatoes.
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook for 5-7 minutes until browned.
- Remove sausage from skillet and set aside. In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until soft.
- Add minced garlic and cook for an additional minute, stirring occasionally.
- Add shrimp, Cajun seasoning, paprika, salt, and pepper to the skillet. Cook for 3-4 minutes until shrimp turn pink and opaque.
- Return sausage to the skillet along with halved cherry tomatoes. Cook for another 2-3 minutes.
- Fold in cooked rice until well combined and heated through. Serve hot, garnished with fresh parsley.
