Ingredients
  

  • 1 pound Shrimp, peeled and deveined Fresh or frozen shrimp can be used.
  • 2 cups Cooked jasmine rice Preferably day-old for best texture.
  • 2 tablespoons Vegetable oil For cooking the shrimp and vegetables.
  • 1 small Onion, diced Adds sweetness and flavor.
  • 2 cloves Garlic, minced Enhances the overall flavor.
  • 1 medium Bell pepper, diced Adds color and crunch.
  • 1 cup Frozen peas and carrots Convenient and adds nutrition.
  • 2 stalks Green onions, sliced For garnish and added flavor.
  • 2 tablespoons Cajun seasoning For a spicy kick.
  • 2 tablespoons Soy sauce Adds umami flavor.
  • to taste Salt and pepper For seasoning.
  • to taste Fresh parsley, chopped For garnish.

Method
 

  1. In a bowl, toss the shrimp with Cajun seasoning, ensuring they are well coated.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Incorporate the frozen peas and carrots, cooking for another 2-3 minutes until heated through.
  5. Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
  6. Pour in the soy sauce and mix thoroughly. Season with salt and pepper to taste. Continue to stir-fry for about 5 minutes until the rice is heated through and slightly crispy.
  7. Gently fold the cooked shrimp back into the rice mixture, ensuring everything is well combined.
  8. Remove from heat and garnish with sliced green onions and chopped parsley before serving.
