- Rinse grapes thoroughly and pat completely dry. Place in a large bowl.
- In a small saucepan over medium heat, combine sugar and water. Stir until sugar dissolves.
- Bring to a boil, then reduce heat and simmer for about 5 minutes, stirring occasionally.
- Remove from heat and stir in vanilla extract.
- Divide syrup into three bowls. Tint one blue, one purple, and one black with food coloring.
- Allow syrups to cool slightly until thickened but still pourable.
- Drizzle colored syrups over grapes, creating a galaxy pattern. Toss gently to coat evenly.
- Spread grapes in a single layer on a parchment-lined baking sheet and let sit at room temperature for 1 hour to set.
- Once coating is hardened, separate any stuck grapes and serve.
Notes
For best results, work quickly when coating grapes as the syrup thickens fast. Store in an airtight container at room temperature for up to 2 days. Best enjoyed fresh.
