Method
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts on a cutting board and create a pocket in each breast by cutting horizontally, being careful not to slice all the way through.
- In a mixing bowl, combine the diced mozzarella, halved cherry tomatoes, chopped basil, minced garlic, balsamic glaze, salt, pepper, and Italian seasoning. Stir until well combined.
- Stuff each chicken breast pocket with the Caprese mixture, packing it in well but not overstuffing.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for a few minutes before slicing and serving.
