- In a medium-sized bowl, mix together olive oil, minced garlic, lime juice, ground cumin, chili powder, paprika, salt, and pepper to create the marinade.
- Place the flank or skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the leftover marinade.
- Grill the steak for about 4-5 minutes on each side for medium-rare, or until the internal temperature reaches 130°F. Adjust cooking time for desired doneness.
- Remove the steak from the grill and let it rest for 5-10 minutes before slicing it against the grain into thin strips.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a few slices of carne asada in the center of each tortilla. Top with diced onions and chopped cilantro.
- Squeeze fresh lime juice over the tacos and serve with lime wedges and salsa on the side.
