Ingredients
  

  • 2 cups Mashed potatoes leftover or freshly made
  • 1 cup Shredded cheddar cheese or cheese of choice
  • 0.25 cup Grated Parmesan cheese
  • 2 Large eggs
  • 0.25 cup Milk whole or 2%
  • 0.25 cup Chopped green onions or chives
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Breadcrumbs optional, for extra crunch
  • Cooking spray or melted butter for greasing muffin tin

  • Large mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with cooking spray or melted butter.
  2. In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, milk, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined. Optionally fold in breadcrumbs.
  3. Spoon the mixture into muffin cups, filling each about ¾ full. Smooth tops and optionally sprinkle more cheese.
  4. Bake for 20–25 minutes, until edges are golden and tops are set. Watch closely near the end.
  5. Let cool 5 minutes. Run a butter knife around edges and lift out. Serve warm, garnished with chives if desired.

Notes

Use creamy mashed potatoes like Yukon Gold. For added crispiness, top with breadcrumbs before baking. Great with any cheese. Let rest in the pan before removing.
