Ingredients
  

  • 1.5 cups mayonnaise
  • 0.25 cup sour cream
  • 0.5 cup roasted almonds chopped finely
  • 8 oz sharp cheddar cheese shredded
  • 0.25 teaspoon garlic powder
  • 3 roma tomatoes deseeded and minced, divided
  • 0.5 cup green onions thinly sliced (extra for topping)
  • 0.5 cup cooked chopped bacon bits and more for garnish
  • salt and pepper as desired
  • 1 cup lettuce finely diced
  • crackers for serving

Method
 

  1. In a large mixing bowl, combine the mayonnaise, sour cream, finely chopped roasted almonds, shredded sharp cheddar cheese, and garlic powder. Stir everything together thoroughly until well-mixed and creamy.
  2. Set aside 2 tablespoons of the minced roma tomatoes for garnish. Add the remaining minced roma tomatoes to the bowl, along with the thinly sliced green onions and cooked chopped bacon bits. Stir well to distribute all the ingredients evenly. Season with salt and pepper to taste.
  3. Spread the finished mixture into your chosen serving dish, smoothing the top. Sprinkle the finely diced lettuce evenly over the surface.
  4. Garnish with the reserved minced roma tomatoes, extra green onions, and additional bacon bits for a colorful finish.
  5. Chill the dish in the refrigerator until ready to serve. Serve with crackers on the side for dipping.

Notes

Remove seeds from tomatoes to prevent watery dip. Pat chopped tomatoes dry with paper towels before adding. Use real bacon bits, not imitation ones for best flavor. Let dip sit at room temperature 15-20 minutes before serving for perfect consistency. Add lettuce just before serving to keep it crisp.
