  • 2 cups cooked, shredded chicken rotisserie chicken works great
  • 15 oz Alfredo sauce 1 jar
  • 1 cup sour cream
  • 1 cup frozen peas
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 32 oz frozen tater tots 1 bag, keep frozen
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  2. In a large mixing bowl, combine the shredded chicken, Alfredo sauce, sour cream, frozen peas, garlic powder, salt, and pepper. Stir until the mixture is well combined and the chicken is evenly coated in the creamy sauce.
  3. Pour the chicken and Alfredo mixture into the prepared casserole dish, spreading it out evenly with a spatula.
  4. Arrange the frozen tater tots in a single layer on top of the casserole mixture, making sure to cover the entire surface.
  5. Bake the casserole in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  6. Sprinkle the shredded mozzarella cheese over the casserole and return it to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Remove the casserole from the oven and let it cool for 5 minutes before serving.

Notes

Make sure the chicken is fully cooked and shredded before adding it to the casserole. Use frozen tater tots for best results - they hold their shape and get extra crispy when baked. For added nutrition, you can include broccoli, mushrooms, or spinach. This casserole can be assembled ahead and frozen for up to 3 months. Store leftovers in an airtight container in the refrigerator for up to 3 days.
