- Prepare the avocado spread by mashing the avocado with lemon juice, salt, and pepper in a small bowl.
- Spread mayonnaise (if using) on one side of each bread slice.
- On the other side of one slice, spread the avocado mixture, then layer with shredded chicken and cheese.
- Top with the second slice, mayo side facing out.
- Melt butter in a skillet over medium heat.
- Add the sandwich and grill for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from the pan, slice in half, and serve hot.
Notes
Best enjoyed fresh for optimal texture. Use rotisserie chicken for quick preparation. Press gently while grilling to help cheese melt without crushing the sandwich.
