Method
- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked. Remove and let rest before slicing thinly.
- Slice the avocado and prepare the cheese slices.
- Spread a thin layer of mayonnaise and Dijon mustard on one side of each slice of bread.
- On two slices of bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices.
- Heat a skillet over medium heat with butter or oil. Grill sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
- Serve warm.
Notes
Store cooked chicken separately in an airtight container for up to 3 days. Assembled sandwiches are best eaten fresh.
