Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado sliced
  • 4 slices cheese Swiss, cheddar, or provolone
  • 4 slices bread sourdough, ciabatta, or your choice
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion thinly sliced
  • 1 tomato sliced
  • Butter or olive oil for grilling

Equipment

  • Skillet or grill pan
  • Spatula
  • sharp knife
  • cutting board

Method

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked. Remove and let rest before slicing thinly.
  3. Slice the avocado and prepare the cheese slices.
  4. Spread a thin layer of mayonnaise and Dijon mustard on one side of each slice of bread.
  5. On two slices of bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices.
  6. Heat a skillet over medium heat with butter or oil. Grill sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  7. Serve warm.

Notes

Store cooked chicken separately in an airtight container for up to 3 days. Assembled sandwiches are best eaten fresh.
