  • 6 strips bacon thick-cut preferred
  • 2 small boneless skinless chicken breasts sliced into thinner pieces
  • Salt and Pepper to taste
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 cups uncooked pasta Rotini recommended
  • 2 tbsp butter
  • 1 tbsp garlic minced
  • 2 tbsp flour all-purpose
  • 2 cups half and half
  • 2 tbsp dry ranch dressing seasoning mix
  • 2 cups cheddar cheese shredded

Method
 

  1. Cook the Bacon: In a large skillet over low heat, cook the bacon until crisp. Set aside, reserve drippings in the pan, and roughly chop the bacon once cooled.
  2. Prepare the Chicken: Season the sliced chicken breasts with salt, pepper, onion powder, and Italian seasoning. Sear in the reserved bacon drippings over medium-high heat until golden and cooked through. Remove, let rest, then cube.
  3. Boil the Pasta: Cook the pasta in boiling salted water until al dente. Drain and set aside.
  4. Make the Sauce: In the same skillet, melt butter and sauté garlic. Add flour and cook for 1 minute. Gradually whisk in the half and half. Stir in ranch seasoning and cheese until smooth and melted.
  5. Combine: Add the cooked pasta to the sauce, toss to coat. Add the cubed chicken and garnish with the chopped bacon. Serve warm.

Notes

Customization: Feel free to add vegetables like peas or spinach. For a gluten-free version, use gluten-free pasta and ensure the ranch seasoning is gluten-free.
