- Prepare the chicken filling by shredding or chopping the cooked chicken into bite-sized pieces.
- In a large mixing bowl, combine the shredded chicken, Caesar dressing, grated Parmesan cheese, garlic powder, black pepper, and Dijon mustard (if using). Mix until the chicken is well coated.
- Lay the bottom half of each croissant on a plate and add a layer of chopped romaine lettuce.
- Spoon the chicken Caesar filling over the lettuce, piling it high for a satisfying bite. Add sliced cherry tomatoes on top if desired.
- Place the top half of the croissant over the filling. Garnish with extra Parmesan shavings and serve with lemon wedges if desired.
