Chicken Kofta with Garlic Yogurt Sauce

Ingredients
  

  • 500 g ground chicken about 1 pound
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1/4 cup fresh parsley finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 cup plain yogurt for sauce
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons olive oil for grilling

Method
 

  1. In a large mixing bowl, combine ground chicken, chopped onion, minced garlic, and parsley.
  2. Add ground cumin, coriander, salt, and black pepper. Mix with clean hands until well combined, being careful not to overmix.
  3. Wet your hands with water and shape the mixture into elongated oval kofta, making 10 to 12 pieces total.
  4. Preheat the grill or grill pan over medium-high heat and brush with olive oil to prevent sticking.
  5. Grill the kofta for 5 to 7 minutes on each side until golden brown and cooked through. Check that internal temperature reaches 165°F.
  6. While grilling, mix yogurt, lemon juice, minced garlic, and a pinch of salt in a small bowl to make the garlic yogurt sauce.
  7. Let kofta rest for a few minutes after grilling to allow juices to redistribute.
  8. Serve the kofta with the garlic yogurt sauce and your choice of sides like pita bread, tabbouleh, or grilled vegetables.

Notes

Mix ingredients just until combined to keep kofta tender. Wet hands when shaping to prevent sticking. Always preheat grill for at least 10 minutes. Use meat thermometer to ensure internal temperature reaches 165°F. Ground turkey can substitute for chicken. Store kofta and sauce separately in refrigerator for up to 3 days.
