  • 1/2 cup grated Parmesan cheese fresh
  • 2 tablespoons fresh parsley chopped, for garnish

Equipment

  • Large pot with lid
  • Wooden spoon or spatula

Method

  1. In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.

  3. Stir in the broccoli florets and cook for 2-3 minutes until they start to soften.
  4. Add the orzo, chicken broth, Italian seasioning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  5. Cover and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
  7. Serve hot, garnished with fresh parsley.

Notes

For a creamier version, stir in 1/4 cup of heavy cream just before serving. Can substitute turkey sausage or plant-based sausage. For gluten-free option, use gluten-free orzo.
