Ingredients
  

  • 2 cups orzo pasta
  • 1 pound chicken sausage sliced
  • 2 cups broccoli florets
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • Salt and black pepper to taste

Method
 

  1. In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and saute for 5 to 7 minutes, until golden and cooked through.
  2. Stir in minced garlic and cook for 1 minute until aromatic.
  3. Add broccoli florets and cook for 2 to 3 minutes, allowing them to begin softening.
  4. Stir in orzo, chicken broth, Italian seasoning, salt, and black pepper. Bring mixture to a boil.
  5. Reduce to a simmer, cover, and cook for 10 to 12 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
  6. Remove from heat and fold in grated Parmesan cheese until smoothly incorporated.
  7. Serve hot, topped with chopped fresh parsley.

Notes

Use fully cooked chicken sausage for best results. Stir occasionally while simmering to prevent sticking. Add extra broth when reheating leftovers.
