Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix well to create the marinade.
  2. Add chicken thighs to the marinade and coat thoroughly. Allow to marinate for at least 15 minutes (up to 2 hours for better flavor).
  3. Heat a cast iron skillet or grill over medium-high heat. Cook the marinated chicken for 6 to 7 minutes per side until fully cooked and charred on the edges.
  4. Let the chicken rest for a few minutes, then chop into bite-sized pieces.
  5. Warm the corn tortillas on the skillet or over an open flame until pliable.
  6. Assemble tacos by filling tortillas with the chopped chicken, diced onion, cilantro, and a squeeze of fresh lime.

Notes

Boneless skinless thighs are recommended for juiciness, but breast can be used if preferred. Don't skip marinating; it is key for flavor absorption.
